On cold winter nights, the last thing you want to do is get out of your house to eat at a restaurant. Although what will comfort you when you are too lazy to get out of the house is a spicy and flavorful bowl of chili. Chili is my favorite winter meal as it is packed with flavor and is pure comfort food. I never really had respect for chili until I was ten years old and entered a chili cook off, where my competitive nature to win the contest also made me fall in love with chili, and yes also win the contest. By winning this contest, my chili was even served at my country club’s restaurant for a couple of weeks in honor of my victory. Chili is now a regular dish I make and I use chili often as a celebratory dish whether it is Christmas, the Super Bowl, or 4th of July. Chili, in my opinion, is one of the most patriotic dishes to eat and is also the state food of Texas. As a born Texan, I take chili seriously with NO BEANS, but if you want to add beans, I guess, the chili still tastes really good. Now I am ready to share with you my Ben’s Super Bowl Chili.
Ingredients:
6 pounds of 80/20 chuck ground beef
10 cloves of garlic, minced
6 tablespoons of brown sugar
5 tablespoons of chili powder
3 teaspoons of ground cumin
3 teaspoons of ground oregano
3 teaspoons of slat
1 teaspoon of cayenne pepper
4, 15 ounce cans of tomato sauce
2 red bell peppers, seeded and diced
1 green bell pepper, seeded and diced
2, 15 ounce cans of kernel corn
2 tablespoons of Worcestershire sauce
6 tablespoons of corn starch
Instructions:
- Brown the beef with the garlic until thoroughly cooked in a large skillet and make sure all large chunks of beef are broken up. Drain excess fat after cooking and move beef into a large dutch oven.
- Add the rest of ingredients (besides the corn starch) into the dutch oven as well and mix a medium heat until the mixture begins to bubble/simmer. Once the chili reaches a simmer, reduce to low heat and cover the pot. Let the chili simmer for at least 1 hour or up to 2 hours. Periodically check the chili and add water or extra tomato sauce if the chili looks like it is getting too thick.
- Once the chili has been able to simmer, in a small bowl mix 3/4 cup of water with the corn starch and add to the chili (You can also add the beans at this time if you want). Let the chili simmer for another ten minutes. Then taste the chili and make sure it is seasoned to your liking. Serve and Enjoy.

Extra Suggestions:
Serve chili with cornbread, lime, peppers, Fritos, sour cream, lime, and LOTS OF CHEESE.
